Jacket Potato with baked beans and american slaw

  • 2 Jacket Potatoes
  • 100g White cabbage
  • 100g Red cabbage
  • 2 carrots
  • 1 tin baked beans

Dressing

  • 2 tbsp honey
  • 1 tbsp olive oil
  • 2 tbsp balsamic vinegar

Method

  1. Preheat Oven to 200°C
  2. Place jacket potato on a baking tray, baste with olive oil and place in oven for 1 hour 15 mins.
  3. Meanwhile slice cabbage into small chunks and grate carrot.
  4. Mix together honey, olive oil and vinegar then drizzle over cabbage and carrots.
  5. Heat the baked beans and once cooked pour over the jacket potato.
  6. Serve
