Honey and Garlic Salmon with med veg

  • 2 x Salmon Fillets
  • Knob of butter
  • 1 Red Pepper
  • 1 Courgette 
  • 1 Carrot
  • 1/2 Onion
  • Handful of parsley

Ingredients for the sauce

  • Handful of walnuts
  • 3 garlic cloves
  • 3 tbsp honey
  • Olive Oil

  1. Preheat Oven to 200°C
  2. Chop carrots, courgette, red pepper and slice onion. Place in a baking tray and put in the oven for 15 mins
  3. Meanwhile salt and pepper the salmon and add a little honey then parcel the salmon in cooking foil
  4. After the med veg has been in the oven for 15 mins turn it down to 180°C, place the salmon in the oven and continue cooking both the med veg and salmon for a further 25 mins.


  1. Cook garlic in a small pan with a tsp of olive oil for 1 minute.
  2. Add Honey and walnuts and cook for a further minute.
  3. Drizzle the sauce over the cooked salmon and med veg.
