6fl oz (175ml) milk
2 egg yolks
Mild honey to taste
A few drops of vanilla essence

Method

  1. Heat the milk to boiling point and add slowly to the well beaten egg yolks.

  2. Return to the pan, preferably a double boiler, and stir over a gentle heat until the mixture thickens slightly.

  3. Sweeten to taste with honey and add a few drops of vanilla essence.

  4. The custard will thicken as it cools.
