Cut 4 pieces of foil each about 25cm and brush lightly with olive oil. Slash each chicken breast with a sharp knife and place a quarter of the mozzarella cheese between the cuts.
Divide the courgette and tomatoes between the pieces of foil and sprinkle with black pepper. Scatter the dried oregano over the vegetables in each parcel.
Place the chicken on top of each pile of vegetables then wrap in the foil (shiny side inside) and vegetables, tucking in the ends.to enclose the chicken
Place on a baking tray and bake in a pre-heated oven, 200°C/Gas Mark 6, for 30 minutes.
Prepare lettuce, cucumber, tomatoes and sugar snap peas on your plates.
Remove baking tray from oven, unwrap each foil parcel and serve on the plates with salad
