1/2 Butter nut
1 onion
grated ginger
1 or 2 carrots
1 1/4 pint of veg stock
1 teaspoon tamarind paste
2 teaspoons of olive oil

Put olive oil plus chopped onions and grated ginger in pan and sweat on heat

Chop butter nutall cubes and slice carrots

Place in pan with veg stock and tamarind paste

Bring to boil and simmer for 30 mins (until soft)

Blend to make soup
