Beef Casserole

1 sliced onion
1 sliced garlic clove
75g sliced mushrooms
1 chopped carrot
1 celery stick
2 tbsp olive oil
300g pack beef stir-fry strips, or use beef steak, thinly sliced
1 yellow pepper deseeded and thinly sliced
400g can chopped tomatoes
750 ml of beef stock

In a large saucepan, lightly cook onion and garlic, in olive oil for 2 mins.

Add beef strips, mushrooms, pepper and tomatoes and lightly cook for a further 3 minutes.

Add chopped carrots, celery, and beef stock then bring to gentle simmer.

Simmer covered for 1 hour or until beef is tender.
